Requires serious freezer space, 14 cubic feet minimum, 21 recommended.

When an animal goes through USDA grading, the carcass is ribbed between the 12th and 13th ribs to expose the ribeye, photographed against a fat-measurement chart, and a USDA grader assigns the Quality Grade and Yield Grade off that image.
